High Protein Fruit Salad



We LOVE this fruit salad. And because this is the season, it's a perfect time to give it a try! We like to have it mid-morning or sometimes as a snack before bed. It's super easy and delicious!
(This is not a picture of my fruit salad but I figured we needed a picture to get in the mood.)

HIGH PROTEIN FRUIT SALAD
2 medium apples, cored and chopped
1 1/2 cups grapes
1/2 med. fresh lemon for juice
1 cup cantaloupe, cubes or balls
3 cup low-fat cottage cheese
2 Tbs. honey
1/4 cup dry roasted peanuts

Combine apples, grapes, and cantaloupe in a large mixing bowl. Drizzle with 2 tablespoons honey and the juice of 1/2 fresh lemon. Toss to coat thoroughly. Add cottage cheese and mix well.
Cover and chill. Just before serving, stir and sprinkle with crushed nuts.
